Research Interests:
Dietary risk factors for colorectal cancer. In particular, research regarding fiber and colorectal adenoma recurrence in the Wheat Bran Fiber trial, and regarding vitamin D, vitamin D receptor polymorphisms, and colorectal adenoma recurrence.

Biography:

Elizabeth Jacobs, PhD, is currently the Principal Investigator on a grant from the National Cancer Institute designed to study the interaction between genes and environmental risk factors related to vitamin D and its metabolism, and how they affect the risk for colorectal cancer. Future projects will include assessing the genetic contributors to endogenous vitamin D synthesis, and the inter-relationship between nuclear receptors as it relates to risk for cancer.

Her doctoral dissertation was a thorough examination of the association between dietary fiber intake and colorectal adenoma recurrence, which since has led to collaborations with the National Cancer Institute to further explore this question. She received her doctorate degree from The University of Arizona in nutritional sciences in 2001 and a master’s degree in foods and nutrition from Purdue University in 1996.
